Turkey & Tomato Chipotle

Evan M., a friend of CCF's from Montana*, who Hélène met while on a trip to New Orleans this Fall, has volunteered a recipe adaptable to the slow cooker that he received from his brother-in-law (oh, and he just happens to also be a professional chef!).
We'll add a picture once we've made it ourselves, but here's the recipe for now because we don't want to keep your taste buds waiting:
Ingredients:
- 2T Olive Oil
- 1 large onion, chopped
- 5 cloves garlic, minced
- 2 cans tomatoes
- 1 lb Ground Turkey
- 2 cans great northern beans
- 1 Qt (900 ml) chicken broth
- 1/2 Can Chipotle in Adobo
- Salt and Pepper to taste
Preparation:
- Heat oil
- Add turkey and cook through
- Add onion, garlic, tomato, and cook down until tomatoes are well cooked down, stir frequently
- Add beans and chipotles
- Cook slowly until the consistency you like, about an hour
- Season to taste with hot sauce, salt and pepper
